Isomalt, also known as Palatinit, is a sugar alcohol widely used as a sugar substitute in the food industry due to its benefits, including sweetness, low-calorie content, and non-cariogenic properties. As isomalt finds broader applications in the food industry, there is a need for the development of new types of isomalt. Crystallization is a key technique for creating new solid forms of isomalt, and understanding its solubility is essential for the crystallization process. This study aims to determine the solubility of milled ISOMALT ST in a water + ethanol solvent system using both gravimetric and laser methods.
The results show that, in the same solvent composition, the solubility of isomalt increases with temperature. At constant temperature, there is a significant change on the solubility of isomalt at x1 ≈ 0.60 which indicates that ethanol could be chosen as the antisolvent for the recrystallization of isomalt. The solubility curves obtained by the laser method were all below those of the gravimetric method, and the overall mean relative deviation was 56.22 %. The laser method was less accurate (MRD1 < 25 %) than the gravimetric method (MRD1 < 17 %), but the laser method could be used as a relative quick way to obtain the data for high solubility situations.
