Unlike traditional surfactant-stabilised emulsions, Pickering emulsions, which are stabilised by clay nanoparticles, have the advantage of excellent interface stability, excellent flexibility and low toxicity. And they have excellent application possibilities in food and medicine. A food-grade Pickering emulsion stabiliser was produced by physically adsorbting the cationic surfactant ethyl lauroyl arginate (LAE) onto the surface of nano-montmorillonite (NMMT).
Experiment: Deionised water was added to the NMMT powder in a 2 wt% solution, stirred and allowed to sit for 1 week to swell fully. Once it did that, a specific amount of LAE (0-0.05 wt%) was added to the NMMT suspension and the resultant mixture was shaken for 30 s, then washed off with a KQ-700 V ultrasonic cell disruptor for 5 min to create a LAE/NMMT complex suspension. Photos were taken of the LAE/NMMT suspensions of each LAE concentration and suspensions were applied immediately after preparation.

Cinnamon essential oil (CEO) was emulsified using a hydroxypropyl-β-cyclodextrin/ethyl lauroyl arginate (HPCD/LAE) complex to form nanoemulsions, which were subsequently incorporated into maltodextrin (MD) to produce HPCD/LAE/CEO/MD microcapsules via spray drying. Starch/polybutylene adipate terephthalate (starch/PBAT, SP) films containing these microcapsules were developed as packaging materials for strawberry preservation. The addition of microcapsules significantly enhanced the antibacterial properties of SP films, effectively prolonging the shelf life of strawberries.
Experimental Procedure: HPCD (3% w/v) was dissolved in deionized water, and LAE (1% w/v) was added, followed by magnetic stirring at 700 rpm and 60 °C for 5 hours. The mixture was then refrigerated overnight at -20 °C and freeze-dried at -80 °C for 48 hours. The resulting HPCD/LAE complex was stored at room temperature. The complex was dissolved in deionized water (4% w/v) to form the aqueous phase. Various oil phases (3% v/v CEO, 3% v/v CEO + 2% v/v MCT, 3% v/v CEO + 4% v/v MCT, and 5% v/v CEO + 2% v/v MCT) were gradually added to the aqueous phase under high-speed dispersion (12,000 rpm), and coarse emulsions were obtained at 18,000 rpm for 5 minutes. These emulsions were then treated with a microfluidizer high-pressure homogenizer for 7 passes at 100 MPa to generate HPCD/LAE/CEO nanoemulsions. Finally, 100 mL of the nanoemulsion was mixed with 90 mL of 10% w/v maltodextrin solution and subjected to spray drying at inlet and outlet air temperatures of 150 °C and 90 °C, respectively. The HPCD/LAE/CEO/MD microcapsules were then collected.

Due to its high hydrophilicity, the oral bioavailability of rosmarinic acid (RM) is limited, which restricts its beneficial uses. Rosmarinic acid exhibits various biological and pharmacological activities. The aim of this study was to extract RM from rosemary leaves and then enhance its lipophilicity and permeability by forming hydrophobic ion pair (HIP) complexes using ethyl lauroyl arginate (ELA) as a novel counterion.
Preparation of RM-ELA HIP Complexes: Different HIP complexes were prepared using a continuous series of RM molar ratios, including 1:0.25, 1:0.5, 1:1, 1:2, and 1:4. The procedure was as follows: a calculated volume of ELA aqueous solution (1 mg/mL) was added dropwise to a constant volume of RM aqueous solution (1 mg/mL) for each respective RM molar ratio. The experiment was conducted at room temperature with magnetic stirring at 400 rpm. The formation of the HIP complex was confirmed by the development of turbidity, which varied in intensity depending on the RM-ELA molar ratio.
